Bird’s Nest Treats

Happy Easter everyone! I got to travel to the Berkshires to spend time with my friend D this weekend. Along with making beautiful dyed eggs, their family tradition was to make very fun bird’s nest treats. Even if you don’t celebrate Easter, it’s a perfect spring snack as the jelly beans look like colorful eggs nestled in the cornflake nests.

So here’s the recipe: (makes approx 15 nests)

2 cups corn flakes (3 cups corn flakes crushed)
1/2 cup shredded coconut
Food Coloring
3 tbsp Sugar
3 tbsp Butter
1/2 cup corn syrup
Jelly Beans

1. Make colored coconut by putting the coconuts in a jar and adding 1-2 drops of food coloring. (We made three different colors – yellow, green, and purple)
2. Boil the butter, sugar, and corn syrup together. Once it boils, let it boil for 5 minutes. Make sure to stir constantly.
3. In a big bowl, mix the crushed corn flakes and coconut. Add the corn syrup and butter mixture and mix quickly.

The mixture should look like this:

4. As the mixture starts to set, use a spoon to scoop up a portion, and set on wax paper. Using the back of the spoon, make a indent in the middle of the “nest” to put the jelly beans in. (We resorted in using our hands- it was easier, if you don’t mind getting sticky)

5. Place 3 jelly beans in the middle of the nest as “eggs”
